Whisk together 2 tbsps honey or maple syrup, 1 tsp vanilla, 3 eggs, 1/3 cup of milk, 1 vinegar, & 2 tablespoons oil.
In a separate bowl, mix 3/4 cup almond flour, 1/4 cup tapioca starch, 1/4 cup coconut flour, 1 tsp baking soda, & a big pinch of salt.
Combine both bowls & mix until everything is fully combined. If you want thinner pancakes, add 1-2 tablespoons of milk & stir.
Scoop batter I think a 1/3 measuring cup. Slowly pour the batter into a greased pan over medium heat to make one pancake.
Cook each pancake 2-3 mins or until the batter begins to bubble and puff up. Flip the pancake & cook until golden brown. Repeat with rest of batter.
Top with preferred toppings such as syrup, fruit, etc.!
