Paleo Turkey “Tortilla” Soup

Dice half an onion and set aside in a bowl.

Remove the top and seeds from the bell pepper and dice it as well.

Add the diced onion & bell pepper into a pot that’s over medium heat with warm oil. Cook for 5 mins.

While the other veggies are cooking, dice the kohlrabi. Remove the skin & any green parts first.

Add the garlic and spices to the veggies in the pot and cook for 1 more minute.

Add crushed tomatoes, green chiles, kohlrabi, & broth to the pot. Cook covered over high to a boil.

Reduce heat to low. Cook for 20-30 mins until kohlrabi is tender. Taste soup & add salt if needed.

Add diced leftover turkey to soup and cook another 5-10 mins.

Serve with sliced avocado or chopped cilantro on top.
