Pan Gravy For Port-Basted Roast Turkey

Cook neck, gizzard & heart in oil covered until beginning to brown @ 12 minutes stir occasionally

Add onions carrots celery margarine thyme bay leaf and parsley stems. Cover Cook on low for 10 min

Uncover and sauté until vegetables begin to brown, @ 10 minutes

Add broth, reserved mushroom liquid (from recipe link below)& port; simmer partially covered @45 min

Strain mixture into bowl, pressing on solids with back of spoon. This is your gravy base!

When turkey is done, place roasting pan on stove and bring pan juices and vegetables to a boil.

Add gravy base and boil uncovered for 5 minutes.

Strain mixture into bowl pressing on solids with back of spoon. Add add'l broth if needed to make 3c

Add butter/flour paste to pan juices and saucepan. Bring to boil for 5 minutes until sauce thickens.
