Pani Popo: Coconut Rolls
Add warm milk and yeast to a mixing bowl.

Add sugar and let sit for 10 minutes to activate and become bubbly.

Add warm water, softened butter and vanilla.

Add two eggs.

Add flour a little at a time. Mix to combine. Then add the salt.

The dough should come together off the sides of the bowl.

It will be slightly sticky. Flour your hands and remove the dough.

Spray a bowl with cooking spray and place the dough into the bowl. Cover and let rise 1 hour.

While the dough is rising make the sauce by combining coconut milk, sugar and cornstarch.

Then turn on the heat and cook on medium heat for 7 minutes or until thickened.

Spray a pan and your hands and grab about 1/4 cup of the dough. Form balls and place in the pan.

Cover with plastic wrap and rise another hour. Preheat oven to 350 about 20 minutes before cooking.

Cover the rolls with the sauce and bake for 18 minutes. Spoon over extra sauce when serving.
