Panko Crusted Fried Eggplant And Shiitake
Ingredients: Eggplant(2), Shiitake mushroom(5), Eggs(2), Flour(3 Tbsp), Panko(1 and 1/2 cup)
Cut shiitake stalk(use stalk as well) and remove the bottom of stalk as it’s hard.

Slice eggplant into 1cm(1/2 inch) rounds.

Put flour(3 Tbsp), eggs(2), and panko(1 and 1/2 cup) in each container.

Dip shiitake in the order of flour, beaten egg, and panko.

Same steps with eggplant.

Ready to deep fry them!

Deep fry them for a few minutes until golden brown.
