Parmesan Chicken Orzo Skillet (weeknight meal!)
Sauté mushrooms over medium high heat.

When browned, remove from pan.

Brown chicken in a bit more olive oil. Season with salt and pepper.

Add orzo, chicken broth, and half and half. Stir well, and cover with a lid (or foil).

Stir occasionally, and continue to simmer until liquid is absorbed.

You can see it thickening here.

Add back the mushrooms, fresh tomatoes, and Parmesan cheese. Stir well.

Serve with extra Parmesan cheese. (This makes about 5 servings.)
