Brush all your porcini well clean

Tear the foot of the porcini’s in long stripes

Add aquafaba, a little flour & lots of lemon zest. Mix well

Layer on a baking tray and drizzle with olive oil > oven 180C / 350F - 25 minutes

Sauce; Chopped shallots, shopped porcini heads, white wine & salt and pepper.

Sauté shallots, add porcini, pour in wine, reduce, cool down & blend. Season with salt and pepper

Crispy lemon porcini after 25 minutes baking

Stir boiled pasta through the sauce, top with crispy lemon porcini
