Pasta with Escarole, Sausage, And Beans
Add oil to a pan and saute onions seasoned with salt and pepper.

When softened stir in the red pepper and garlic.

Add the sausage.

Cook until meat is no longer pink and slightly golden.

Toss in the escarole and broth.

Cook for 3-4 minutes until vegetable wilts.

Stir in the beans.

And adjust seasoning.

When the pasta is cooked..

Combine the escarole mixture with the pasta. Add the reserved chicken broth if needed.
