Needs: ≈10 eggs, 210g butter, 300g flour, 9g salt, 240ml of both milk and water

Add in butter, milk, and water

Stir till butter is completely melted in

Once melted, take off heat,add in flour immediately and STIR!

Transfer back to heat. Stir till thick and pulls off from sides

Transfer to a mixer with a paddle attachment

Add in your eggs one at a time.

Stop adding eggs when your dough is thick but runny, and shiny

Next take a piping bag and tip and pipe your shapes!

First bake at 400F for 10 minutes- then turn down to 325F for 20-25. Watch for doneness

Allow to cool and your pate a choux is ready for fill!!
