PB & Coconut Oatmeal Skillet Cookie

Heat cast iron skillet over medium heat. Add in 3tsp of coconut oil. Add in 1 cup of coconut flakes

Stir constantly until golden brown. Transfer coconut to a bowl. Wipe out skillet.

Mix 1/2 cup of smooth creamy peanut butter and 1/3 of coconut oil.

In med bowl, whisk 2 cups of flour, 1tsp of bkg powder, and 1/2 tsp of bkg soda.

Mix in 2 cups of old fashioned rolled oats

Using an electric mixer, beat 1 stick of butter (cut into squares),4ozs cream cheese, and 1/4 cup PB

Add in 1/3 cup of sugar, 3/4 cup of brown sugar and remaining peanut butter. Beat until fluffy.

Add in 2 eggs and 1 tsp of vanilla. Combine together.

Add in dry ingredients, beat on low, occasionally stopping to scrape down sides.

Add and mix in the toasted coconut

Cover and refrigerate for 1 hour

Preheat Oven to 375 ° and place cast iron skillet into oven. When oven reaches 375° remove skillet.

Add 1 tsp of coconut oil to hot skillet. Put in cookie dough. Bake for 15 mins. Makes 2 batches!!
