Peach & Blueberry Galette
To make the crust, combine flour, salt and cold cubed butter.

Mix with your fingers (or pulse) until pea-size bits of butter are still visible.

Add ice-cold water and mix...

...until it all comes together into a rough ball. Chill the dough.

When chilled, transfer dough onto a floured surface and roll it out.

Don't hesitate to re-flour your working surface so the dough doesn't stick.

Drape the dough onto your rolling pin...

...and unroll it onto a parchment lined baking sheet.

Combine all-purpose flour and almond flour together.

Spread this mixture evenly onto the crust, leaving a 2-inch border around the edge.

Combine peach slices, blueberries, vanilla extract and sugar.

Add the fruits on top of the crust.

Place a few blueberries nicely on top.

Fold edges of the dough over the fruits.

Brush egg wash onto the folded border.
