Get ready for Pecan Pesto Dressing

Add pecans, basil, parmesan, lemon zest, garlic, extra virgin olive oil and salt & pepper

Blitz until smooth. Add more olive oil if consistency is too thick.

To create Pecan Pesto Dressing, mix pesto together with lemon juice and extra virgin olive oil.

Cook pasta until al dente

Cut asparagus into smaller pieces and quick blanch

Boil frozen peas for a few minutes, drain and run under cold water to stop further cooking.

To assemble, mix Pecan Pesto together with pasta, asparagus and peas.

To serve drizzle extra virgin olive oil and grate lemon zest on top. Enjoy!
