Peppercorn Crusted Beef Tenderloin
Mix together the multicolored crushed peppercorns with the salt, pepper, rosemary and brown sugar

Pat dry and then brush room temperature beef tenderloin with olive oil

Rub and pat the spice rub all over tenderloin

Pour broth into bottom of a pan with rack and transfer seasoned tenderloin to rack and roast

While tenderloin is roasting melt and cook butter and smashed garlic together

Until the butter has browned and smells nutty - remove the garlic

Roast until meat thermometer reads 135°F for medium-rare, 35 to 45 minutes-for 4 lb tenderloin

Pour brown butter sauce all over the tenderloin right out of the oven - it will sizzle

It’s perfectly coated and cooked to perfection

Tent with foil and let rest 10 min before slicing.
