Bring spinach and water to a boil. Once boiling transfer to a small food processor

Purée until smooth and strain. Set the green water aside, discarding chunky spinach

Combine gluten free flour, cornstarch, baking powder and salt

In a separate bowl, use an electric mixer to beat together butter (or ghee) and monkfruit til fluffy

Add egg, vanilla, peppermint extract, and 1/4 cup green water. Beat until well mixed

Slowly stir the dry ingredients into the wet.

Stir in 3 tablespoons of chocolate chips

Use a cookie scoop to drop the dough onto cookie sheet. Press remaining chocolate chips into tops
