Perfect Fall Salad - Crispy Kale Salad Hommus
Trim and cut kale into bite size pieces

Bake kale in oven for 15-18 minutes until crisp

Chop sweet potato and roast in oven for 30 min until golden brown

Mix hommus, Dijon mustard, lemon juice and maple syrup together to make dressing

Crush roasted cashew nuts and prepare ingredients for assembly

Layer hommus dressing first, then scatter crispy kale, roasted sweet potato on top.

To serve scatter crushed cashew nuts, chilli flakes and a drizzle of extra virgin olive oil.
