Pineapple Chicken Sheet Pan Dinner
Preheat oven to 400° and line a Large Baking Sheet with foil

Pierce 1 lb mini potatoes and toss with 2 tbsp olive oil and season with salt & pepper

Marinate 4 chicken breasts in 2 tbsp olive oil and 2 tbsp Jamaican Jerk Rub

Slice your favorite bell pepper and onion and arrange in the middle of the sheet pan

Place green beans on one end, mini potatoes on the other, & chicken on top of the onion & pepper

Top chicken with Spicy Pineapple Rum or a pineapple chutney

Bake 30-35 minutes or until the internal temp of the chicken reaches 160°
