Whisk 1 C flour, 1 C water, and 1 yeast packet.

Mix until foamy.  Let it set 15 minutes.

Add 1 1/2 T olive oil, 1 3/4 t salt, 1 3/4 C flour

Knead with dough hook for ~6 minutes until dough ball forms.

Remove dough ball and coat the edges of the bowl with oil.

Return dough to bowl, coating it with oil.

Cover with foil and let it rise for two hours.

Rise and shine!

Place dough on a lightly floured surface and with your hand, pat it into a 1 inch thick disc.

Cut dough into 8 pieces.

Form a small round ball by pulling edges under. Let ball rest for 30 min under oiled plastic wrap.

Sprinkle a little bit of flour on top of each ball.

Gently pat each ball until about 1/4 inch thick.

Let discs sit for 5 minutes.

Using the basting brush, lightly oil an iron skillet warmed to medium heat.

Cook on each side for about a minute until the dough is golden with some spots of darker brown.

Look 👀 at that bubble! Bubbles are good.

Stack cooked pitas on a plate to cool.

Try to let them cool before you dig in! (I did not.)
