Pizza/Pasta Sauce with Fresh Tomatoes

Halve the tomatoes, quarter the onion, and leave the garlic whole (peeled).

Place them, cut side down, on a wide-bottom nonstick pan.

Drizzle with oil, salt, pepper, and dried thyme.

Place on a low heat, covered, for 20 minutes or until the veggies are fork-tender.

Turn the heat to high and cook for a further 5-10 minutes.

Until most of the liquid has evaporated and the bottom of the veggies gain a good amount of caramelization.
Pour water or stock and stir to mix all the fond from the bottom of the pan.

Simmer to reduce slightly.

Add sugar and ketchup.

Blend with a hand blender until smooth. Taste and adjust seasoning.

Add chopped basil or mint.
