Plant-Based Chocolate Fruit Pizza
In a large bowl mix 1/2c almond butter, 1/3c date sugar, 1/3c applesauce, 1T ground flax, and 1t vanilla.

Add 1/2c buckwheat flour, 1/2c cocoa powder, 1/2t baking soda, and 1/2t salt. Mix thoroughly.

Keep mixing until the dough is thick.

Place on a parchment-lined baking sheet.

Press into a large circle, so the dough is 1/8” thick.

Bake at 350 for 20 minutes, or until the center of the cookie is baked. Let the cookie cool completely.

Add 1c baked mashed white sweet potato, 1/4c cocoa powder, 3T date syrup, and 1T lemon juice to a food processor.

Blend until smooth, adding 2-4T non-dairy milk.

Spread the frosting on the cooled cookie.

Top with fruit and enjoy!
