Plant-Based Coconut Curry Granola

Add 2 C rolled oats and 1 T curry powder to a medium bowl. Stir to combine.
Add 3 T date and 3 T maple syrup, and 1 t vanilla to the mixture. Stir to completely coat the oats.
Stir in 1/4 C shredded coconut flakes.
Spread on a parchment-lined baking sheet. Bake for 20-25 minutes at 350.
Let cool completely on the tray. Then break into clusters. Sprinkle with extra coconut and enjoy!
