Plant-Based Coffee Pecan Breakfast Muffins
Mash 2-3 bananas to make 1 1/2 cups.

Mix 1 1/4C oat flour, 1/4C date sugar, 1t cinnamon, 1t baking soda, 3/4t baking powder, 3/4t salt.

Stir until combined.

Add the mashed banana, 6T coffee, and 3T maple or date syrup.

Stir until combined.

Fold in 1/3C chopped pecans.

Scoop a scant 1/4 cup of batter into a lined muffin tin. Top each muffin with a pecan half.

Bake at 350 for 26 minutes, or until a toothpick comes out clean.
