In a large bowl mix 1 1/2C oat flour, 1 1/2t baking powder, 1t cinnamon, and 1/2t baking soda.

Stir in 3/4C apple cider, 3T maple syrup, and 3T lemon juice. Set aside to rest.

Meanwhile, finely chop two large sweet apples.

Heat a nonstick pan to medium heat. Add a heaping tablespoon of apple to an (optional) pancake mold.

Cover with a scant 1/4 cup of batter. Cook for 1-2 minutes.

Remove the mold and flip the pancake. Cook for an additional 1-2 minutes, until light brown.
