Plant-Based Mocha Cookie Sandwiches
In a large bowl add 1/2c applesauce, 1/3c almond butter, 1/2c date sugar, 1/4c espresso powder, and 2t vanilla.

Add 1 2/3c oat flour, 2T ground flax, 1/2t baking soda, and 1/2t salt.

Stir and mix completely.

Scoop the dough into tablespoon sized balls. Arrange on a parchment lined baking sheet.

Flatten each cookie to 1/8” thickness. Bake at 350 for 15 minutes.

Meanwhile add 1c baked mashed white sweet potato, 1/4c cocoa powder, 1/4c date syrup, 1t espresso powder, 1t vanilla to a food processor.

Blend until smooth, adding 2-4T non-dairy milk as needed. This will be the filling.

Remove the cookies from the oven and let them cool completely.

Pipe the icing onto a cookie and press another cookie on top. Repeat with all the cookies. Serve and enjoy!
