Process 1 1/2C oat flour, 1/4C pecans, 1/4C maple syrup, 1/8t salt, and 1T water to form a crust.
Place a strip of parchment into each cup of a muffin tin. Press 2T of crust into each cup. Makes 9.
Make a flax egg by mixing 2T ground flax and 3T water.
Blend 1lb baked sweet potato, flax egg, 1/3C maple syrup, 1/3C applesauce, 1t cinnamon, 1t nutmeg.
Divide the mixture evenly into the cups. Then bake at 400 for 25 minutes.
Let cool in the muffin tin.
Serve, and enjoy! Keep refrigerated.
