Plant-Based Strawberry Banana Muffins
Preheat the oven to 350. Line a muffin tin with liners.

Combine 2 C oat four, 1 t baking soda, 1 t cinnamon, 3/4 t baking powder, and 3/4 t salt.

In a separate bowl, mix 1 1/2 cups mashed banana and 1/4 cup nut butter.

Add the banana mixture to the flour and stir to combine.

Fold in 1 C semi-frozen chopped strawberries.

Fill each muffin cup with 1/4 C batter. Place a slice of banana on top of each cup.

Bake for 25 minutes. Then let cool completely.
