Pork Larb with Toasted Rice Powder
Season your wok by adding oil to the hot pan and carefully use a towel to rub in the oil.

Next, toast the rice on high heat, stirring constantly to prevent burning. Toast until all the rice is browned.

Put the toasted rice in a spice grinder and grind to a powder.

Sauté the garlic and shallots in 1 tbsp of oil until browned.

Add in the pork and flatten to the bottom of the pan to help browning. Flip and continue browning.

Add 1/2 cup Tiger Smirk Sauce and mix in.

Turn off heat & add the toasted rice powder, tomatoes, cucumber, cilantro. Sprinkle with Thai Chili Powder for a kick & never forget to taste test!!

Scoop into the lettuce cups and toss with more toasted rice powder.

Serve with lime and be sure to squeeze it on top before taking a bite!
