What you'll need
Pork Chops (thin cut)
2 tablespoons (divided)
Extra Virgin Olive Oil
2 cloves (minced)
5, sliced thin
Prepare your ingredients.
Heat 1 T oil in a large skillet over med-high heat. Add pork. Cook 2-3 min per side & done through.
Remove pork to a plate. Tent with foil. Add 1 T oil to skillet with shallot & garlic. Cook 2-3 min.
Add plums, honey, vinegar, and ginger. Cook 6-7 minutes or until softened.
Tuck the pork chops around the plums and serve. Enjoy!
