Port-basted Roast Turkey With Pan Gravy
Rub turkey with 2 tbs butter, salt & pepper, cover w/damp cheesecloth, roast 325° for 30 minutes

Bring 1 1/2 cups broth, 1/2 cup port and 4 tbs butter to simmer in heavy saucepan.

Baste turkey w/3/4 c. Port mixture. Roast turkey 1 hr. 10 min. Baste twice w/remaining port mixture

Second basting

Peel, core, and cut one apple in half

Peel and chop one carrot

Peel and chop one onion

Pour 1 cup water, apples carrots and onions into roasting pan. Baste turkey, roast 20 minutes

Remove cheesecloth, roast @50 min until skin browns & meat thermometer register is 180° F in thigh.
