Portuguese Kale Soup
Brown sausages in a soup pan.

Let browned sausages cool, then slice.

Sauté onion about 5 minutes, then add carrots. Sauté a few more minutes.

Stir in potatoes, butternut squash and garlic.

Add chicken stock and water. Simmer for 15 minutes.

Add the kale in a couple of batches and stir it into the soup.

Stir in sausage and beans along with pinch of red pepper flakes and salt.

Simmer another 10 to 15 minutes and the soup will be ready!

Enjoy with crusty bread and a glass of red wine!
