Potato & Spinach Croquettes
Soften 2 tbsp onion in 2 tbsp oil

Add 2-3 cloves minced garlic

Now add in 1 tsp chili flakes, 1/2 tsp cumin powder, salt and 1/4 tsp turmeric. Remove from the pan

Add 2 cups chopped spinach to the pan, sauté till softened

Six palm sized potatoes - boiled in salted water

Mash well with 1 tbsp butter

Mix in the masala paste and spinach. Adjust seasoning.

Pipe out croquettes, trimming w a scissor as you go along

Pipe and freeze for 30 minutes (or shape by hand)

Once they’re firm roll them in egg wash, breadcrumbs and put on a clean tray

Fry for 2 minutes on each side and eat!
