Peel and chop 12oz of potatoes
Put in Micro cooker with 1 1/2 cup of water for 10 minutes
Drain water, add 2 Tbsp butter, 2-3 Tbsp milk, 1/8 tsp salt and 1/4 tsp garlic powder and mash
Fold in 2oz shredded pepper jack cheese
Add 3 Tbsp of mixture on 8 warm corn tortillas
Spray each side with oil! Place in air fryer for 10 minutes on air fry. Rotate halfway through.
While the cook. Mix 3/4 cup sour cream, 2 oz queso fresco, 1/2 chili lime rub, 1/4 cup fresh cilantro in the manual food processor.
Serve with sauce and cole slaw mix
