Pressure Cooker Chicken & Rice Soup
Set pressure cooker to sear or sauté and add 2 tsp oil

Add 1/2 small onion, 1 large carrot, and 1 large celery to pot. Sauté 3-4 minutes until softened

Add 3/4 tsp crushed dried rosemary, 1 tsp thyme and 3 cloves of pressed garlic

Stir constantly for 30 seconds. Turn off heat

Add 5 cups low sodium chicken broth

Add 1 large chicken breast and 3/4 cup Brown Rice

Seal pressure release. Set to high pressure for 13 minutes and start

Natural release for 10 minutes then quick release remaining pressure

Remove chicken and shred

Add chicken back to pot and stir in fresh parsley.
