Pressure Cooker Jamaican Jerk Chicken And Coconut Rice
This is an easy one pot chicken dinner
Here’s what we’ll need!
Add olive oil to the pot

Add seasoned chicken thighs to the pot

Sear chicken on both sides. Work in batches and remove seared pieces to a plate.

Add another bit of olive oil and add onions. Cook for 2-3 minutes.

Add minced garlic and ginger and cook for 1 additional minute.

Deglaze the pot with chicken broth making sure to scrape the bottom of the pot.

Add coconut milk (and remove the lid if it falls in). Stir. Then add rice and level the mix.

Add shredded coconut, black beans, and chicken to the pot.

Place the lid on, set the vent to sealing and cook on high pressure for 9 minutes.

Serve with mango, chopped cilantro and shredded coconut.

Goes great with a glass of hibiscus tea.
