Combine flour, sugar, yeast, and salt in bowl of stand mix Add water & knead

Grease a large bowl. Roll dough into ball. Cover and leave to proof for an hour or more

Transfer dough onto clean surface and divide into 16-20 even pieces of dough

Roll each piece into a rope

Line up the ropes on the baking trays

Cover with clean kitchen towel. Let rise for another 30 minutes

In a pan simmer 8 cups water. Add baking soda, brown sugar. Stir. Put ropes in water for 15 secs

Brush with egg wash. On some with sea salt. Leave others plain for the choc- lotus dip

Bake for 45 minutes at 325F

Melt chocolate and lotus spread together in microwave

Dip some of the pretzel sticks into the choc-lotus spread. Top with sprinkles. Return to rack. Cool.
