Pulled Pork Enchilada Skillet
Thinly slice 2 green onions, separating greens from whites. Add greens to bowl with 4T sour cream.

Halve lime. Cut one half into wedges.

Dice one Roma tomato.

Coarsely chop 8 oz cooked pulled pork using Salad Choppers.

Drain 6 oz black beans using Easy Read Measuring Colander.

Heat EVOO in cast iron skillet. Cook white portions of onions with 5 oz corn (1/2-3/4 cup) for 2-3 minutes.

Add black beans & pulled pork. Season with salt. Heat 3-4 minutes.

Stir in tomato & 3 oz red enchilada sauce. Remove from heat.

Top with shredded Cheddar Jack cheese.

Broil 2-3 minutes until cheese is melted.
