Pumpkin Cheesecake Muffins
1 1/2 C flour, 2 1/2 tsp pumpkin pie spice, 1/2 tsp cinnamon, nutmeg, cloves, salt, baking soda

1 C pumpkin, 1 C sugar, 1/2 C + 2 Tb oil, 2 eggs

Add wet to dry and fold just until it comes together

Filling: 4 oz cream cheese, 1/2 C powdered sugar

Streusel: 2/3 C flour, 2/3 C powdered sugar

5 Tb butter tossed with fork

Fill tins half way with batter

Divide cream cheese filling

Top with remaining batter

Bake at 350° for 25 minutes
