Pumpkin Coffee Cake

Prep the crumble topping by measuring out flour, sugar, salt, spices and butter.

Add flour, sugars and spices together and mix well until combined.

Use a pastry cutter (or a fork) to cut the butter into the flour mixture for the crumble. Set aside.

Add flour, baking powder, baking soda, salt, spices and sugars to a mixing bowl.

Whisk well until the dry ingredients are fully combined and set aside.

Add pumpkin purée, oil, yogurt and eggs together in a separate mixing bowl.

Whisk well until the wet ingredients are smooth and well combined.

Pour the wet ingredients into the mixing bowl with the dry ingredients.

Mix until there are no streaks of flour. The batter will be somewhat lumpy.

Pour batter into a baking pan. Sprinkle with prepared crumble topping.

Bake at 350F for 35 - 40 minutes until a toothpick inserted comes out clean. Enjoy!
