Pumpkin Cream Cheese Muffin with Crumble Top
Mix 1/4 c brown sugar, 1/2 c flour, 1 tsp cinnamon & 1/4 c melted butter

Whisk 1 3/4 c flour, 1 tsp baking soda & powder, 1/2 tsp salt, 2 tsp cinnamon together

Combine 2/3 c brown sugar, 2 eggs, 1 c pumpkin, 1/2 c vegetable oil, 1/3 c milk & 1 tsp vanilla

Whisk dry ingredients with wet

Blend 6 oz softened cream cheese, 1 egg yolk, 1/2 tsp vanilla and 3 T sugar until smooth

Put 1 T of muffin batter in each muffin well

Place a scant tablespoon on muffin batter

Fill cups full with remaining muffin batter

Place crumbles on each muffin, press lightly to stick

Bake 5 minutes at 450° then 15 minutes at 350°

Cool 5 minutes in tin before removing to enjoy
