Boil water and butter in a medium pot. Remove from heat. Stir in flour and salt until dough forms.

Transfer to an electric mixer and add eggs one at a time until fully incorporated.

Spoon 1-2 tablespoons of batter into a baking sheet.

Bake 20-30 minutes depending on the size of the puffs. Poke hole in center to allow steam to escape.

Whisk together pudding mix, milk, pumpkin purée, and spice until well blended.

Once puffs are cool either pipe the filling into the centers or cut the tops off to fill.
