To make the oat flour, pour 2 cups of whole oats into the bowl of a food processor.

Process until finely ground.

In a large bowl, combine oats, pumpkin pie spice, salt, and baking powder.

Whisk together eggs, pumpkin purée, and the remaining ingredients until smooth.

Mix the dry mixture into the wet mixture until combined.

Heat a skillet over medium-medium high heat and spray with coconut or olive oil.

Using a 1/4 cup measuring cup, scoop batter onto the skillet.

Cook until pancakes start to bubble and lightly brown. Flip and cook the other side.
