Line cookie sheet with foil or parchment paper. Season and bake in 400 degree oven for about 15 min
Make pineapple salsa with chopped onion, drained pineapple tidbits, green chili’s, salt.
Choose your tortillas. Look for high fiber! Whole wheat tortillas are great too!
Remove fish from skin. Flake into large chunks.
Assemble tacos using coleslaw mix, rainbow trout, cheese, pineapple salsa, and tomatoes!
