Quick Cooker BBQ Chicken Stuffed Sweet Potato
Mix 6 oz tomato paste, 1/3c water, 1/4c soy sauce, 3T maple syrup, 2T apple cider vinegar, & garlic.

Add 2-3 chicken breasts on top (frozen is fine), then place the rack on top of them.

Peel and quarter sweet potatoes and place in ceramic pot. Cover with silicone lid, place into cradle

Lower into Quick Cooker. Seal lid.

Use Chicken setting (15 min). When time is up do a quick release of pressure. Take out potatoes.

Remove chicken, shred with Salad Chopper. Set to Sear and stir in a cornstarch slurry until thick.
