Quick Cooker Quinoa "Risotto"
Every good recipe starts with half an onion. For this one. I chop it up with the Food Chopper.

I also chop up whatever veggies I have. This time I used 3 kinds of peppers, 2 (peeled) eggplant,

1 zucchini, and 1 (peeled) sweet potato.

Saute the onions in 3T butter for 3-5 min, add 1 cloves garlic, 3 1/2 c chicken broth, and veggies.

Cook on Whole Grain setting (10 min), then allow pressure to naturally release for 10 minutes.

Stir like crazy, then add a small handful of shredded Parmesan. Top with chicken apple sausage.
