Quinoa Tabbouleh (Delicious Protein Packed Salad)
Layout the ingredients for making tabbouleh.

Dice the cucumbers and tomato. Season with salt and let marinade for 10 minutes.

Finely dice the red onion.

Slice the blanched green beans into small rounds.

Wash and pick the herbs. Remove large stems.

Finely chop the curly parsley.

You can do this in a magimix blender if you prefer an easier way!

Finely chop the mint.

Next, lets cook the quinoa. Wash and strain the quinoa before cooking. Cook in 3 part water to 1 part quinoa with some salt.

Allow the tomato and cucumber to sit on a strainer to drain excess liquid from the salting process.

To to make the vinaigrette: Add the olive oil to a bowl, along with lime juice, crushed garlic, salt and pepper.

The quinoa should be cooked after 15 minutes. Sit over a strainer and pour over some boiling water to rinse. Allow quinoa to cool.

Let's mix the quinoa tabbouleh. Add everything to a bowl. Mix well and check the seasoning. Add more salt, pepper or vinaigrette to taste.
