Rainbow Crostini, Pasta Primavera & Spring Mix Salad
We're going to take one batch of sheet pan roasted vegetables & turn it into 3 delicious recipes - Rainbow Crostini, Pasta Primavera & Spring Salad!

Gather & wash all your fave colourful veggies (we used red, yellow & orange bell peppers, tomatoes, zucchini, asparagus, aubergine, red onion & beets)

Chop up all your veg, lay it all out on a large sheet pan & drizzle olive oil over top to nicely coat the entire batch. Preheat oven to 400°F.

Season with coarse/flake sea salt, garlic powder, Italiano seasoning & ground black pepper.

Bake on middle oven rack approx. 20 mins or until desired tenderness. You may want to leave beets in a bit longer.

Using sliced Calabrese bread, prep your homemade crostini by brushing with olive oil & adding a few shakes of garlic powder + a few pinches of salt.

Bake on a sheet pan at 400°F approx. 8 mins.

Spread, slice & layer your fave cheeses onto your crostini - we used a homemade herbed Ricotta, fresh Buffalo Mozzarella & Cocktail Bocconcini.

You could also add some pesto!

Add your veggies on top of your desired crostini.

Add some L-O-V-E or other personalized message with mini food cutters.

Garnish with your fave fresh greens - we used basil & micro greens.

With some of the remaining roasted veg, add to your favourite pasta with a bit more olive oil & freshly grated Parmigiano-Reggiano cheese. Then...

Toss the remaining veg on top of fresh Spring mix & sprinkle with a bit of feta, goat cheese or sliced bocconcini & dress with Balsamic Vinaigrette.
