Rainbow Trout Cauliflower Rice Bowl
What you'll need

Clear Springs Foods Rainbow Trout
2 Tbsp
Taco Seasoning
2 T melted
Butter
1/4 c
Plain Yogurt
2
1/2 Tbsp Lime Juice
3 T
Honey
1 T
Milk
Salt
1
Avocado
1 bunch
Cilantro
14 oz
Coleslaw Mix
1 diced
Red Pepper
1/4 c
Ranch Dressing
2 T
Apple Cider Vinegar
1-2 T
Sriracha
10 oz
Cauliflower Rice
Line pan with foil for easy clean up. Place trout skin side down.

Mix taco seasoning and melted butter in small bowl.

Brush mixture on trout. Place in 400 degree oven for 12-15 minutes.

Make Sauce by mixing yogurt, lime juice, milk, and honey. Set aside in fridge.

For coleslaw mix together ranch, sriracha, honey, and lime juice. Set aside.

In large mixing bowl combine diced red pepper, coleslaw, and cilantro.

Add dressing to coleslaw and mix well.

Cook cauliflower rice as package directs. Add in 2 tsp lime juice and 1/4 c cilantro.

Take fish from oven. Remove from skin, if desired.

Place coleslaw, cauliflower rice, and trout filet in bowl.

Drizzle with white sauce. Add avocado and lime wedge.
