Ratatouille Baked Chicken! Grab your Dutch oven... *Hint* our new enameled cast iron one is perfect! Preheat oven to 450 and grab 8 bone-in chicken thighs... no skin tho! Add some Salt and pepper! Admire your vegetables... 5 Tomatoes, 1 onion, 2ish zucchini (I had squash), 5 cloves of garlic, 1 yellow pepper and 1 eggplant! Get out frustration from your day....chop up onion! Crush that garlic! No 🧛♀️ for me! Dice and Chop all vegetables! Heat oil in your beautiful Dutch oven and add the chicken! Brown both sides of course! Remove those gorgeous thighs! Add the onion and garlic (AKA change the smell of your house 🙌🏼 ) sauté for 3 minutes Add the eggplant and cook for 5 minutes! Pow pow! Add 1 TB of tomato paste (or more!) Add the rest of the veggies! Continue to Cook for 10 minutes, stirring occasionally 👩🏻🍳 How good does that look?!?😍 Partially submerge the chicken in your veggie wonderfulness! Move to oven and Bake for 20 minutes uncovered ! Remove from oven (check temp of chicken) add fresh Basil! Mix it up! Can you believe you just made this? Serve your gorgeous dinner! You deserve it!
