Combine with 15 Oz crushed tomatoes, 2 tsp Herbs de Provence

Microwave for six minutes, stirring halfway.

Set Rapid-Prep Mandoline to slice on No. 4 setting.

Slice 1 zucchini, 1 Asian eggplant, and 2 plum tomatoes.

Place tomato mixture into 2 qt Enameled Cast Iron Baker. Layer vegetables in a circle.

Whisk 2 tbsp olive oil, 2 tsp balsamic vinegar, and 1 tsp Herbs de Provence.

Brush oil mixture onto veggies and bake for 22-25 minutes.

Let sit for five minutes.
