Red Curry Noodle Soup
Bring a large pot of water to boil.

Turn off the heat. Add rice noodles,stir to separate.Let stand for 5minutes.Drain well & keep aside.

Heat oil in a wok, add chicken and sauté for 8-10minutes. Keep it aside.

In the same wok, add onions.

Add bell peppers and sauté on high flame for 5-7minutes.

Add red curry paste.

Add coconut milk and mix well.

Now add brown sugar.

Add the fish sauce.

Add in the cooked chicken pieces.

Mix well and let it come to a boil.

Now add the cooked noodles, stir it well.

Garnish with Basil leaves and serve hot.
