The ingredients you need to make this soup

Sauté onion and garlic in butter (or olive oil)

Add remaining ingredients (except lemon & quinoa) & bring to the boil, then simmer for 20 minutes

While the soup is cooking, prepare & cook the quinoa
4
Once the soup has finished cooking, use a hand stick blender to blend the soup

Add the cooked quinoa and lemon juice & stir through the soup

Add some chopped parsley and serve
